Keftedes (meatballs) with sweet potato

This is based on my mom's classic recipe, but with sweet potatoes instead of regular potatoes.

Ingredients
  • 500 g minced pork (1300 g - W_bowl)
  • 1 large sweet potato (300 g?)
  • 1 slice of bread
  • 125 g (unpeeled) large onion
  • 1 egg
  • 1/2 teaspoon salt
  • 2 teaspoons (10 mL) dried parsley
  • Ground black pepper (to taste)

Directions
Use a blender to turn the bread into crumbs (no need to toast the bread first).

Peel the potato, cut to smaller pieces and chop finely in the blender. Do the same with the onions. Beat the egg separately to make mixing easier.

Add all the ingredients, except the bread, in a large bowl, and use hands to mix until the mixture is uniform. Start adding bread crumbs to make the mix thick and hard enough to hold its shape.

Shape into balls or small burgers (for optimal frying), place in a high-temperature deep fryer, and immediately turn the heat down to a medium. Fry until thoroughly cooked.
