One-pot meatball pasta

This is a one-pot attempt at the classic dish using my new Cosori electric pressure cooker.

Ingredients
500 g meatballs, cooked or half-cooked

1 tablespoon olive oil or other oil for frying
1 large onion

400 g (1 standard can) chopped tomatoes
500 g (1 standard carton) tomato passata
3 cups water
1 vegetable or chicken stock cube

7.5 mL (1.5 teaspoon) garlic granules (OR 3 crushed garlic cloves)
5 mL (1 teaspoon) chili powder
15 ml (3 teaspoons) paprika
mixed herbs, such as Italian Seasoning
salt/pepper to taste (I use about 1 teaspoon salt)

500 g dry pasta


Directions
Have all ingredients prepared before starting the pressure cooker. Chop the onion, and use boiled water to dilute the stock cube into.

Turn the Cosori on to pressure 6 for 8 minutes (or start with the Sautee function for a couple of minutes) and fry the chopped onion with the oil. (NOTE: wholemeal pasta was slightly undercooked at 8 minutes).

When ready, add half of the water, chopped tomatoes and passata, herbs and spices, meatballs , pasta (if using spaghetti, break in half to fit in pot) and the rest of water and seal the pot to allow to come to pressure.

When time is done, carefully release pressure, open pot and stir well.
