Chocolate banana bread

Ingredients
2 large eggs

230 g all-purpose flour
30 g unsweetened cocoa powder
200 g granulated white sugar
5 mL (1 teaspoon) baking powder
1.25 mL (1/4 teaspoon) baking soda
1.25 mL (1/4 teaspoon) salt (skip if using salted butter)

113 g butter

4 large ripe bananas (~ 450 g)
5 mL (1 teaspoon) vanilla extract
85 g (1/2 cup) chocolate chips


Directions
Start by lightly beating the eggs (no need for an electric mixer) in a large bowl. Set aside to come to room temperature.

In a bowl large enough to hold all the ingredients for the final batter, sift the flour and cocoa powder, and then add the sugar, baking powder, baking soda and salt.

Melt the butter, and set aside to cool down. At this point, it would probably be a good time to turn on the oven to 450 K (~ 180 deg. C).

Mash the bananas in a blender and add them to the eggs, together with the butter and vanilla. Stir to make sure they've mixed, and fold gently into the dry ingredients; then fold in the chocolate chips. Once everything is moist, pour the batter into a greased loaf pan and place in the middle of the heated oven. Bake until a toothpick comes out clean (about 60-70 minutes).
