Tikka Masala

This is a simplified version of a recipe I saw on a Gordon Ramsay show. The recipe is just for the sauce. You can add this to your favourite meat, that you cook separately. The ingredients are not in precise quantities, and can be adjusted to personal taste.

Ingredients
500 g onions, sliced
250 g large bell peppers, chopped
2 teaspoon ground ginger
1 teaspoons ground garlic
1/4 teaspoon chilli powder
2 teaspoons ground turmeric
4 teaspoons garam masala
3 teaspoons sugar
100 g tomato puree
800 g chopped tomatoes
400 g potatoes, diced in large chunks
(boil the potatoes to cook or almost cook, or use canned potatoes)
4 tablespoons yoghurt
A bunch of chopped coriander


Heat some oil in a pan and start frying the onions and then the peppers. Add salt and pepper. Add the ginger and garlic. When the onions start loosing their colour, add the chilli powder, turmeric, garam masala. The mixture will turn quite dry. Keep on the fire for a bit while stirring to avoid sticking, and add the sugar.

Add tomato puree and mix in to get a thick paste. Add the chopped tomatoes and potatoes, mix and let it simmer for a bit, while stirring occasionally. When it looks ready, take off the fire and add the yoghurt and coriander.
