Orange chocolate cake



I've always had mixed feelings about orange-flavoured chocolate, but this cake is definitely on the positive side. The recipe is from the latest ASDA magazine, though I changed the way the sugar is mixed in, because theirs was too tedious. The orange flavour is very light, almost like the flavour in Βασιλόπιττα (Vasilopitta) that my mom makes. I think it would be ideal to serve with tea.

Ingredients
100 g butter
150 g dark chocolate
75 g ground almonds
Finely grated zest from two oranges
2 tbsp freshly squeezed orange juice
6 large eggs
100 g caster sugar
Cocoa powder

You will need a deep cake form. Grease it and line the base with baking paper to avoid sticking. Turn on the oven at 430 K (fan-assisted 410 K or gas 3).

Break the chocolate into small pieces in a microwave-safe bowl. Microwave in short bursts to avoid burning. When it looks like the chocolate is melting, add the butter and continue (this is because butter melts much faster than chocolate in the microwave). At the end, you should have a uniform liquid. Allow to cool down for a few minutes.

Separate the egg whites and yolks in two different bowls. Beat the egg whites until you get soft peaks (note: this needs to be double-checked). Beat the egg yolks while adding the sugar, orange zest and orange juice. Finally, stir in the almonds and chocolate mix and fold in the egg whites.

Pour the mixture into the cake form and leave in the oven for 35-40 minutes. Allow to cool for 15 minutes, turn out of the cake form and let it finish cooling.

Dust with the cocoa powder before serving.
